Using Weyermann Extra Pale Premium Pilsner as the base, a touch of toasty Vienna Malt, and more corn than a Summer BBQ, we fermented this beauty extra cold with our house lager yeast. Luker - Czech Pilsner - 4.7%
Our Czech style Pilsner, brewed to ultra high standards for a premium lager drinking experience. Mashed using heirloom pilsner malt that is floor malted in the Czech Republic. As always with our European style lagers, we utilize 100% natural sour wort for all mash & boil pH adjustments. Hopped early during the lauter, and throughout the boil with high quality Saaz hops. Fermented super cold with our house lager yeast, low and slow. !00% natural carbonation captured during the fermentation process. Lagered in our horizontal tanks nearly 2 months. This is a full & well-rounded fresh Pilsner beer, capturing the perfect clash of soft malt richness and a crisp floral saaz hop finish that keeps you wanting that next sip.
Matamata - NZ Hazy IPA - 6.6%
Named after the New Zealand town where Lord of the Rings, "The Shire", was filmed, this hazy IPA boasts a fellowship of NZ hops that deliver tropical notes all the way to Mt. Doom. Nelson Sauvin, Riwaka CGX, Peacherine, and Waimea hops all were added in the dry hop to give a tropical, tangerine, pineapple, and sauvignon blanc taste that will make you want to scream from the Two Towers. A pleasantly smooth finish, backed by flaked oats, oat malt, and a touch of rye, give Matamata a great body fit enough for the Return of the King.
Sup Y'all - West Coast IPA - 7.0%
Sup Y'all! Meet our house West Coast IPA. This one checks all the boxes: Fruity, Dank, Bitter, and crystal clear! If you long for the days before the "Haze Craze" took over, then this hoppy treat is for you. We started with a simple malt bill of 2-row, premium extra pale Pilsner malt, and a touch of Carahell (light crystal malt). We generously hopped it throughout the boil with classic C-hops (Chinook, Cascade), and some Citra at the end and in the whirlpool. We then dry-hopped it with some new age hops such as Idaho 7 & Mosaic for some fruit forward and dank flavors, and then some more Cascade for some classic pine/citrus character. Drinks super easy with a dry but resinous finish, tons of pineapple/blueberry/citrus throughout. GLUTEN REDUCED
Billy Cannon - Hazy Double IPA - 8%
Big hoppy beer yall! Billy Cannon starts off with a grain bill of pale malt, malted oats, flaked oats, and wheat. We hop it lightly in the kettle with Freestyle Hops Southern Cross, then in a chilled whirlpool with Idaho 7. Fermented with our preferred English ale yeast. Dry hopped heavily with some choice Strata, Citra Cryo, Idaho 7, and Southern Cross. Straight up tropical OJ! Kiwi, pineapple, tangerine, lil bit of sweet lime, and just very very dank.
Fritz - German Pilsner - 5.0%
Fritz is our German style Pilsner, a cousin to the Czech Pilsner. The main differences are slightly elevated bitterness and hop character, but still has all the crispness and crushabilty of its cousin. Using Weyermann Extra Pale Premium Pilsner malt for the entirety of the grist, the noble hop character shines bright from the very first sip. Perle, Hallertau Mittelfruh, and Tettnang are used throughout the boil and whirlpool, for a crisp bitterness, floral, spice, and earth notes throughout. Crisp and easy to drink due to a month long lagering process. Pours a light, golden, straw color, with pillowy, dry, foam. GLUTEN REDUCED
Fruit Friends - Prickly Pear Gose - 4.0%
Cool down during the dog days of summer with this refreshing Prickly Pear sour! We brewed this delicious concoction using 100% Texas grown and malted @Texmalt, and some Motueka hops throughout the boil for some extra lime-like flavor. We then added over 550 lbs of Prickly Pear, which gives it an amazing refreshing flavor and color, as well as some Orange and Lime. Some Pink Himalayan Sea Salt was added for some zing, and some agave for mouthfeel and a touch of sweetness. Put it all together and we got a pretty refreshing beer that's also quite the looker. Festbier - 5.4%
Our classic & sessionable Festbier is here! Differing from its more robust and malty relative Marzen, Festbier boasts balance and drinkability due to its moderate golden maltiness and a supportive hop crispness to round it out. We start this beer out with a solid base of all German heirloom malts, specifically Barke Pilsner, Barke Vienna & Barke Munich. Hopped in the kettle with a moderate bittering addition of Hallertau Mittlefruh, then we give it a touch of German Saaz right at the end of the boil. Fermented as cold as our house lager yeast can handle, utilizing the natural co2 from this process to fully carbonate the beer. We then let it lager for nearly 9 weeks. Prost!
Gisela - Marzen - 5.7%
Märzen, the OG Oktoberfest lager. Named after our beloved local home-baker Gisela, who treats us to some delicous breads made with our spent grain. Gisela offers a different perspective on the seasonal German lagers by bringing a richer body, glowing amber hue, complex malt toastiness, and cherrywood/pumpernickel notes throughout. A true challenge of balance, we start with a malt bill of heritage Barke Munich malt, Isaria 1924, and a light handed mix of German caramel malts. We mash at various temperatures, add hops before and during the boil, and ferment as cold as possible with our house lager strain. Krausened and spunded for 100% natural carbonation. Lagered ice cold for 8 weeks. Prost!
For All - American Pilsner - 4.1%
“For All”… a collaboration with our buds at Wren House, is our take on a more sessionable American Pilsner, using high quality ingredients from all over and put together in our great American melting pot. This delightful beverage starts with some Moravian Barley from the Czech Republic, some Vienna Malt from Germany, a touch of North American flaked Corn, and some Colorado grown hops from our friends at Billy Goat Hop Farms. It pours a pale golden color, with a pillowy white head as cold as the Rockies, and has hints of floral and spice on the nose. Once this cold and refreshing Pilsner hits your mouth, you’ll get smooth notes of biscuit and cracker, a light bitterness and touch of citrus, with a real crisp finish. This is your classic beer-drinkers beer right here, but don’t let that fool you, it was intended to be enjoyed by everyone.
Fast & Left - West Coast IPA - 6.0%
Our good buds from Artifex Brewing Co the Left Coast came out during the F1 race to brew a fantastic West Coast IPA! We did a simple malt bill of 2-row, with a touch of Golden Promise and Flaked Oats and completely loaded it up with hops (almost 2 lbs/bbl on the hot side, and over 4 lbs/bbl on the cold side!). The idea behind this was to blend hops from the Pacific Northwest and New Zealand to create an out of this world fruit bomb. For bittering, we added Simcoe to keep it nice and pleasant, while adding in Southern Cross and Cascade as aroma additions for some fruit and pine. We then whirlpooled with Motueka and Cascade for some lemon zesty aromatics as well as classic grapefruit. By the time we got to the dry hop, we must have lost our minds for adding Strata, Motueka, Simcoe, and NZ Cascade as well as a touch of Motueka Hop Keif for a truly fruit forward explosion of flavors. Notes of Lime Zest, Tangerine, Grapefruit, with a touch of pine and a pleasant bitterness come across the palate as you take a sip. Pours crystal clear, as West Coast IPAs should. GLUTEN REDUCED
Power Move - IPA - 6.2%
Hop lovers rejoice! We got with our buds at Batch and made a refreshing take on the IPA, one that cumulates the high notes of all of our favorite hoppy beers. Lower bitterness, clean expressive malt character, and a pleasant dryness that leads to endless drinkability. This all started with an asssertive pale malt bill of the finest floor malted heritage maris otter, heirloom pilsner malt, and a sprinkling of golden oats. Fermented dry with British Ale yeast. Dry Hopped twice, first with Nelson and Cascade early into fermentation, then again at the end with Nectaron hops and some Rakau Hop Kief. These lend to a medley of dank floral tones combined with an all encompasing tropical brightness. Best of both worlds. Tail Wags Dog - Hazy IPA - 6%
Don't get too ahead of your skis, or let the dog catch car, or something like that... Anyways here's an American Hopped Hazy IPA for your enjoyment. Tail Wags Dog is a tried and true approach to making Hazy IPA. Big dank assertive American hops? Check. A delicate blend of pale malt and high protein oats and wheat? check... Soft clean fruity hop notes thanks to a post fermentation dry hop? You betcha. This one came together in all the right ways.
Silent Laughter - Red IPA - 6.5%
Red IPA... Some call it nostalgic... some call it an "Old Man Beer".... We call it delicious. This blast from the past take on the American IPA has classic and complimentary American hops team up with a crisp, bitter, malty beer to make for a pleasant well rounded IPA experience. At first sip, this beer blasts you up front with a strong pine and resin with a pleasant bitterness, then smooths over to berries, malt, and a touch of rye, while finishing with strawberry, and fruit notes on the finish. The perfect Winter sipper, that keeps you warm and cozy and reminds you of the early 2000's craft beer days. We're laughing on the inside. GLUTEN REDUCED
Shredder - Coffee Oatmeal Stout - 5.8%
We've had Coffee Oatmeal Stout on our minds since we started building this place. The time has come. Thanks to some delicious once a year specialty roasts from our friends at Spokesman Coffee here in South Austin. We took a specific blend of both their Guatemalan BLACK MASS and their Peruvian ANGEL MASS and dumped those whole beans into a finished Oatmeal Stout. The result is aptly named SHREDDER. Expect big bold chocolate flavors coming through from our complex malt bill, but in a shreddable 5.8% abv format. These unique coffee beans lend to both subtle cherry/raspberry notes and big waffle cone, smores, chocolate cake notes. Complex yet sessionable. Mmm. GLUTEN REDUCED
